Meatless Monday: Greek Gnocchi


Tonight's dinner (like every Monday night in our house) is inspired by the Meatless Monday Movement. Going meatless once a week not only provides excellent health benefits (there's a reason your mother told you to eat your veggies) but can also reduce your carbon footprint. Who doesn't love that? Most importantly, going meatless can be delicious!

Tonight's menu features Greek Gnocchi. Gnocchi by definition is a small potato dumpling. What gnocchi really is...a tiny piece of heaven! Take the Italian roots of gnocchi add it to the traditional flavors of greek fare and what you have my dear friends is pure awesomeness!

Greek Gnocchi (created by B)

ingredients:
1 package of gnocchi (found in your pasta aisle)
1 large hothouse cucumber, skin on, diced
12 mini sweet peppers, sliced into rings (substitute bell peppers if necessary and dice)
1/2 pint grape/cherry tomates, halved
4 oz crumbled feta cheese
2 lemons, juiced
1/4 cup extra virgin olive oil
1 tsp salt
1 tsp pepper
1 T fresh oregano, chopped (or 1 tsp dried oregano)
2 cloves garlic, minced
1 small shallot, finely diced
1/4 cup thinly sliced basil

method:

In a large bowl combine the cucumber, peppers and tomatoes. Set aside. In a small bowl whisk together the lemon juice, olive oil, garlic, shallot, salt, pepper and oregano making a vinaigrette. Set aside.

Prepare gnocchi to package specifications. hint: when they float to the top of the water, they are done.

Remove gnocchi from water and toss with vinaigrette. Add chopped vegetables and feta cheese. Gently toss to combine. Serve with basil on top.

Enjoy with your favorite glass of wine!





The wait is over...

For those of you who have been asking, I'm back in the food blogging world. In my absence I have grown a baby in my belly AND raised him to the age of 8 months. I have missed this outlet so much and feel like I finally have time to get back into it. While away, I have been cooking my little heart out. So for those of you who been patiently waiting my return (all 10 of you), here ya go (drum roll)....


Thai Takeout - Take One

ingredients:

6 T chicken stock
2T Lite Soy Sauce
2 tsp light brown sugar
1/2 tsp corn starch
2T Olive Oil
1T Sesame Oil
1 red bell pepper sliced into thin strips
1 tsp red pepper flakes (omit if you don't like heat)
2 garlic cloves, minced
4 skinless, boneless chicken breasts, thinly sliced
1 cup thinly sliced, fresh basil leaves
3 green onions, sliced into 1-inch pieces
1/4 cup toasted cashews
Cooked Jasmine Rice

method:

In a bowl, whisk together the stock, soy sauce and brown sugar. Add the cornstarch and whisk until the cornstarch and sugar are dissolved. Set aside.
Begin rice preparation. Follow package instructions. I cook mine with coconut milk (canned or refrigerated) and add in 1 tsp of sugar for extra flavor but you can use water.

In a large fry pan over med-high heat, warm the olive and sesame oil. Add the bell pepper and stir-fry for 1 minute. Add red pepper flakes and the garlic and cook for 1 minute, stirring frequently. Add the chicken and cook through. Stir in the green onions and cook until the onions are slightly wilted. Whisk the sauce once again, pour the mixture into the pan and cook to a boil. Toss in cashews, stir until coated with sauce and remove pan from heat. Toss in fresh basil just before serving.

Place rice on a plate and top with the stir-fry. Garnish with a little extra basil.

Spilling the beans...

Dear Little One,

I wrote down my feelings the day I found out I was pregnant with you. It was very early on a Saturday morning (February 27 to be exact) and I just knew something was different. I climbed out of bed at 5:30 a.m. to take a pregnancy test and within what felt like 2 seconds the test read...PREGNANT. I did a little happy dance, much like that of Hugh Grant in Love Actually, and climbed back into bed. I woke your Father to tell him of the good news but sometimes men aren't overly keen on being woken by a barking dog, a giddy wife and bright lights all around. I laid there for what felt like 3 years trying to fall back asleep. But visions of you and all things baby were too much to allow my mind to sleep.

Leading up to taking the test, I had a very vivid dream of pacing the upstairs hallway from what will be your nursery to the office. In this dream I was holding the sweetest baby boy and in it I could feel how much I loved you even in my sleep. I will always cherish that dream.

It's hard for me to imagine all that will change when you finally arrive and yet I can't comprehend what things will remain the same. I've never experienced anything like pregnancy before. It brings about feelings of apprehension, elation and joy. I feel so blessed to have gotten pregnant so quickly and despite the sometimes endless nausea and exhaustion, it is the most exciting thing I've ever done in my life. I want you to know and always remember that we wanted a baby. We hoped and prayed for our lives to be forever changed by you. We are in awe of God's mercy to allow us to play a very small role in creating your life. He's chosen your body as a place for His spirit to dwell and we are anxiously awaiting getting to see all He's created you to be. I daydream of holding you, what you will look like, the sound of your voice, and your good newborn smell.

So dear son or daughter, stay comfy, grow perfectly in God's image and we'll be here counting down the days until November 5 (or whatever day you chose to arrive).

South of the Border at Home


I love Mexican food! Not that stuff you get at La Thisorthat and El Whatever. I mean real, authentic Mexican food. I remembered an arepa I had in a market while in Napa and I had some leftover pork roast and decided it needed a whole new look. I took some leftover pork loin, fresh corn tortillas, homemade tomatillo salsa, homemade pico de gallo, oaxaca cheese and some fresh chopped cilantro. Next I made myself a big ol' margarita (ok maybe two) and enjoyed my dinner fireside!

Project 20-10

It's only the end of January and I am finally getting around to sharing my projects for the year. I've just been having too much fun living life! So without further delay...2009, I bid you adieu! Thanks for the memories made and the life lessons learned.

I’ve got a feeling that 2010 is going to be a great year! I’m optimistic because I don’t base my happiness on the state of the economy, the nature of the current political debacle or what others opinions are, but rather the moments in life that are worth remembering and celebrating each day with friends, family and loved ones for God hasn’t given me a spirit of fear!

As I do every year, I’ve decided to give myself a few projects. Here they are in no particular order:

(1) Read the Bible cover-to-cover. I’m happy to report that so far, I’m on track and loving it!
(2) Grow something edible. I’ve been meaning to start a garden for years. This is my year! Check back for updates and photos. I’m praying my green thumb for plants carries over to yielding delicious crops.
(3) Cut the grocery bill. I’ve never given myself a grocery budget. As you all know, I love to cook and I won’t scrimp on the quality of my ingredients. Given that, I’ve been pondering how to cut my grocery bill without eating prepackaged/processed foods (Blech!). I’ll share any tips and progress as it comes.

So there’s the list. Notice there isn’t one project to do with “getting skinny” or “losing weight.” That’s because I am officially cool with me. I eat healthy (90% of the time) and I work out at least 4 days a week. This decade will not be spent obsessing over calories and hovering over the scale. This decade is about being at peace with the person God made me and seeking out the person he wants me to become. I will always strive to be healthy and part of that is learning not to obsess and live a more balanced life.

Join me on this journey of 2010. Watch me succeed, fail and pick myself up again. I hope your 2010 is off to a most fabulous start and is full steam ahead to the best life could offer!

Best of 2009 - Day 18 - 31

Fail. But I'll at least finish what I started.

18. Shop. Online or Offline, where did you spend most of your mad money this year? Outside of the grocery store, it's probably a tie between Nordstrom and Target.


19. Car Ride. What did you see? How did it smell? Did you eat anything as you drove? Who were you with? Best ride of the year took place at Heibel Ranch on Mount Howell in California. Trent Ghiringhelli, owner of Heibel Ranch, took Brent and I on a 2 hour private tour of his vineyard. It was a beautiful evening and the highlight of our Napa trip. We toured the property in his old Jeep (it had a history of its own) while drinking Tecate and taking in the sites. We saw horses, wild turkeys, a black bear, redwoods and the most amazing sunset! We had the pleasure of tasting his wine Lappas while sitting by the lake enjoying delicious cheese and excellent company. If you're ever in Napa, it's a must see!

20. New Person. This year I gained a brother-in-law. He's a great addition to the family and most of all, he makes my sister-in-law Jami very happy! Now if I could just get them back on the east coast!

21. Project. What did you start this year that you're proud of? Game Night. It all started last Christmas. After opening the loot and eating way too much food, my siblings and I started playing Monopoly. We had a blast. So much in fact, we decided to make it a monthly ritual. So one Saturday a month me, Brent, Scott, April and Sara all meet up for food, games and you never know what else!

22. Startup. What's a business that you found this year that you love? My new favorite find is Etsy. You can find a version of anything you are looking for and a whole lot of stuff you could never use!

23. Web tool. It came into your work flow this year and now you couldn't live without it. It has simplified or improved your online experience. Google Reader. It helps me keep up-to-date with the many blogs I read.

24. Learning Experience. What was a lesson you learned this year that changed you? How to forgive and let someone go all at the same time.

25. Gift. What's the best gift you gave yourself this year that has kept on giving? The ability to be ok with being imperfect.
26. Best Insight or Aha Moment? Relaxation is not only good for me but fun too!
27. Best Social Web Moment? Did you meet someone you met over the web? No.
28. Best Stationary? cardstock.com
29. Best laugh? No one moment stands out but game night has provided me with the best laughs of the year!
30. Best Ad? The pothole commercial.
31. Best Resolution from 2009? To learn to live in the moment. I haven't mastered it but I've come a long way!
